Here’s a quick one for you folks on this lovely, extremely cold, afternoon!
IT’S APRICOT DAY!
Today celebrates the apricot: the fruit that pretty much is exclusively eaten dried because who eats fresh apricots? Some people, probably. Now, admittedly, AK in general dislikes dried fruit. “It’s a texture thing.” So it’s up to me, SP, to throw on the mantle of Apricot King, and eat some orange squishy awesome!
I specifically got some from Bergin Fruit and Nut Company, a local bunch whose family members I’ve had as students in math. Something about brand loyalty whenever I’m looking into getting some fruit and/or nuts. They’ve been a staple of St. Paul for longer than my parents have been alive. Pretty much everybody in the Twin Cities has had some Bergin at some point or another.
Watch out, though. Dried fruits are like sugar sponges. The picture below represents 140 calories, the same amount you’d get from a bowl of Honey Nut Cheerios. Don’t go too crazy!
But, like most things, apricots are improved by dipping in chocolate. That’s something I’ve learned every Passover, as it is a sort of tradition of my mother’s.
