TODAY IS NATIONAL PINEAPPLE UPSIDE-DOWN CAKE AND LIMA BEAN RESPECT DAY!
The pineapple upside-down cake would have been fine as a right-side-up cake. Somebody looked at a tarte tatin and was like, “Hey! Let’s turn this stuff upside-down for no reason!” And now we have the cake as we know it. You bake it, flip it upside down, and then eat it while you get to see the slices of pineapple on top. Ooooooh.
Shopping at the store, we had everything in our cart to make one at home, when suddenly we spotted this cutie.
A little mini-cake just for today! We decided it was probably a better decision than making one just because of the time commitment and the leftovers commitment. It was very tasty! Brown sugary, pineappley, and that satisfying crust… It’s a great dessert. It’s not chocolate, but it’s great.
Today was also Lima Bean Respect Day. Respect the bean. Thanks to the media we consumed as children, we were condition to dislike foods that were green, especially these strange beans. Black beans? Refried Beans? All good. The magical fruit, after all. But lima beans? Not supposed to go there.
And still as adults we kind of feel it. But it’s important to branch out and have some… lima… beans… I guess…
