[FHCx330] National Leftovers Day/National Maize Day/National Parfait Day

TODAY IS NATIONAL LEFTOVERS DAY, NATIONAL MAIZE DAY, AND NATIONAL PARFAIT DAY!

We wanted to do something different from the last couple times we did parfaits. This time we picked up a fruit and yogurt parfait from McDonald’s.

Tastes like fruit and yogurt. NEXT!

Maize. We could have done something elaborate with maize, but instead opted for the cheap stuff: some tasty Xochitl chips. Says “maiz” right on the bag.

Lastly, our dinner came courtesy of last night’s Thanksgiving feast. Of course we went home with these:

There was just so much good that we had to keep eating it. Frankly, we would’ve consumed the calories anyway, it’s just a matter of having them spread out over two days instead of one. That’s being responsible, right?

SPom’s stuffing, sweet potato banana mash, blueberry wild rice, and SPad’s beautiful turkey.

Who doesn’t like leftovers anyway?

Tomorrow is National Cake Day!

[FHCx192] National Pina Colada Day/National Pick Blueberries Day

We got caught in no rain today.

IT’S NATIONAL PINA COLADA DAY AND NATIONAL PICK BLUEBERRIES DAY!

There aren’t many places to pick blueberries around here. AK is able to pick them out at the grocery store…

2016-07-09 18.01.41.jpg

THOSE ONES.

We also found things that look kinda like blueberries while out on a Pokemon Go safari today. We didn’t actually pick these because we would probably die.

2016-07-10 11.14.38.jpg

Delicious but deadly? We may never know!

The day didn’t specifically say to eat the blueberries… soooo… whatever.

Anyway.

We went to the Mall of America today since we knew this picture would be appropriate. Margaritaville has been under construction for several years. And every time we pass by, we imagine what could have been: dudes with visor tan lines sitting at a bar with their backs to many drunk women on a bachelorette party night.

It was also appropriate to go to the MoA because of the Corona-owned Cantina #1. We had no idea that this pina colada was going to be a big spectacle! The “Eroticolada” is “Cruzan coconut rum and Dekuyper Luscious Melon schnapps” mixed with creme de coconut. Well that’s neat. HOW ABOUT SERVING IT IN A COCONUT?!

2016-07-10 14.50.58

That probably took some effort…

2016-07-10 14.50.49

YOUR COCONUT WASN’T ENOUGH?! HAVE ANOTHER FULL GLASS OF IT ON THE SIDE!!

Needless to say, we didn’t get through it all. It tasted hardly boozy, which probably means that it was incredibly boozy. A nice cool breeze of a drink on a hot Minnesota afternoon.

Tomorrow is National Blueberry Muffin Day and National Mojito Day!

[FHCx119] National Blueberry Pie Day

We’re no strangers to blueberries and

IT’S BLUEBERRY PIE DAY!

But we just can’t have the crust. That’s ok, Manischewitz has us covered since we have a little bit of time left on this Passover holiday.

One thing that’s nice about blueberry pie among all the other fruit pies is that you don’t have to cut up or de-stem or de-pit a bunch of fruit for it. Cherries? Gotta take care of that mess of stems and pits individually. Apples? Gotta peel them and cut them. Blueberries? You can eat them whole. So make some sauce out of ’em. (Okay, yes, sometimes you get blueberries with stems. But most of the time you don’t so shaddap!)

SPom did the honors:

Tasty and lovely. Thanks, SPom!

[FHCx28] Blueberry Pancake Day

Not like we really needed an excuse to have breakfast for dinner, but hey,

TODAY IS BLUEBERRY PANCAKE DAY!

We typically have eggy breakfasts, so this was a nice occasion to do it up a bit. There’s a Facebook group that we found through our Weight Watchers meeting and it’s proven to be a great resource for ideas on low-calorie/low-point foods. Recently somebody posted a tip about a brand of pancake mixes called Kodiak that is quite a bit lower in “cost” than your average mix. We found that it’s available at Target, so it became part of our blueberry pancake plan. Blueberry plancake!

There are other varieties of Kodiak that are just about as low as this one, but protein is our friend.

Mix the stuff (it’s a just-add-water mix), pan the cake, blue the berries, and there you have it:

None of the others were this attractive.

AK did successfully try her hand at a pan-flip. You had to be there.

As many of you have undoubtedly seen, there are lots of step-by-step instructional recipe videos floating around the internet. One such video caught our attention as a good companion for our flappyjacks, so we gave it a go. Presenting: cauliflower hash browns!

Here’s the recipe we followed:

In the end, ours came out a little differently but still very yummy. We currently have one grater and it has really small holes, so the cauliflower shreds came out a lot tinier. We also unwittingly used up all our onion on dinner yesterday, so we used onion powder to try and make up for the flavor loss. Those things in combination with the heat on the frying pan probably being too high, each batch being a bit too big, and maybe not quite enough egg to keep it all together, it got reeeeeaaal crumbly. But it was delicious anyway.

2016-01-28 17.33.05.jpg

See how tiny? It was almost more like a powder.

2016-01-28 17.36.01.jpg

Egg ‘n’ stuff

2016-01-28 17.52.53

We swear it didn’t taste nearly as burnt as it looks!

2016-01-28 18.00.04

Throw in some Morningstar farms sausage and you’ve got yourself a kickass breakfast! FOR DINNER! Without going too nuts!

Tomorrow is Corn Chip Day, so we’ll try to keep it at least a little bit interesting. Seeya then!
