TODAY IS NATIONAL CHOCOLATE CUPCAKE DAY!

What kind of cupcakes aren’t chocolate? I’m sure they’re good, because they’re cupcakes. But they aren’t chocolate.

Some people defame the cupcake because it isn’t just cake. Some people are uber-hipster and don’t even like the resurgence of cupcakes as a trend because they’re beyond it. If it’s tasty, we’ll eat it. And Lund’s & Byerly’s always has a selection to ogle.

You’re right, it doesn’t look like much cake made it into this “cupcake.” But it was a lot of chocolate and it was really good.

[FHCx213] National Raspberry Cake Day/National Jump for Jelly Beans Day

Blow a raspberry at someone!

IT’S NATIONAL RASPBERRY CAKE DAY AND NATIONAL JUMP FOR JELLY BEANS DAY!

Jump for Jelly Beans day is NOT Jelly Beans Day. Been there, done that. Instead, today celebrates the acting of jumping for said beans. Why? Enthusiastic leaping is just something that needs to be done. If SPAK were to invent a few holidays in this vein, only to revisit foods we love, we might include

  • Squeal for Banana Cream Pie Day
  • Making Wild Hand Gestures for Spaghetti Day
  • Do a Backflip for Baked Alaska Day

or other obnoxious titles. Still, we force ourselves to continue on the tradition of food holidays so… SP put the jelly beans on the top shelf of the cabinet.

AK had a recipe handed off to her from cousin SPamy for a raspberry cake. Essentially, you take a white cake mix and infuse some frozen raspberries into it, making it very pink.

Overall, pretty good. Could be better, but we did what we had to. We’ll try again tomorrow for National Raspberry Cream Pie Day! Somebody needs to use up their raspberries we guess…

[FHCx191] National Sugar Cookie Day

Frosted or unfrosted?

IT’S NATIONAL SUGAR COOKIE DAY!

We picked frosted, because if you’re going for sugar, you better be ready to go all out.

We spent today in Hudson with the SParents and no bakery around had any sugar cookies. So we resorted to what we’re used to: go to Target!

We each settled on having one and a quarter cookies. That was enough for us.

[FHCx163] National Corn on the Cob Day/National German Chocolate Cake Day

Summertime!

TODAY IS NATIONAL CORN ON THE COB DAY AND NATIONAL GERMAN CHOCOLATE CAKE DAY!

SPAK is finally on summer vacation! School is out, and the livin’ is easy. Corns are grilling, and the chocolate is German. With our dinner, we cooked up some corn SPom style. No boiling, no weird roasting, just oven-ing.

Leave the corn in their husks. Trim off the edges so you can fit them on a sheet.

As they are, no rinsing or anything, 350 F for 20-40 minutes.

We like ours with butter and pepper.

Now it’s not nearly the same as the corn roast at the MN State Fair, which exemplifies everything a corn cob should be, but it was still really tasty. This will hold us over until August when we can eat that delicious corn! Also pictured: SP‘s crab salad open-faced sandwiches.

For dessert, we had some delicious cake courtesy of Key’s Cafe again. When we went to pick up our Strawberry Rhubarb Pie the other day, we saw this and couldn’t resist:

What a German Chocolate Cake should be.

We remembered there was something curious about German Chocolate Cake’s history, so we had to do a bit of research. Names can be deceiving. In this case, it’s named after a guy, Samuel German, who developed a dark baking chocolate in 1852. When a recipe showed up in Dallas 105 years later, popularity spiked. Then the possessive was dropped at it just became “German” Chocolate Cake. Go figure. Still. Delicious!

[FHCx73] National Coconut Torte Day

Tortle power!

TODAY IS NATIONAL COCONUT TORTE DAY!

Raise your hand if you don’t like coconut. Okay, you look silly, put it down. Most people’s objections mirror that of Tallahassee from Zombieland:

But it’s amazing! Think of how much we had to work, as a species, to uncover what coconut had in store for us. Who would have thought some gigantic, impenetrable, rock-shaped fruit could have had both sweet milk and tasty, funky-textured flesh? You might get annoyed with it stuck in your teeth, but that’s no reason to get mad. It’s reason to get braces. Or something.

In any case, this isn’t just about coconut. It’s about torte. It’s about SPom baking us this amazing coconut torte. What makes a cake a torte? Some people will tell you it’s about how the cake is made, or how the cake is layered, but honestly, we think it’s just people trying to be fancy.
