[FHCx357] National Date Nut Bread Day

9 days left!

TODAY IS NATIONAL DATE NUT BREAD DAY!

“Bread,” they call it. Because it rises in a loaf pan and has flour and water. But it’s much more like a banana bread. Basically, you love the taste of something, so why not turn it into a cake? Dates are naturally sweet and subtle, with a honey kind of flavor. Truly lovely.

AK went all over town today trying to buy some date nut bread somewhere, to no avail. Even Wuollet’s, Grand Ave’s terrific bakery, didn’t have any in today as they gear up for the holidays. So what do we do? Make it at home! Here’s our recipe.

2016-12-22-18-11-18

Chop up some dates.

2016-12-22-18-21-06

About a cup and a half’ll do.

2016-12-22-18-21-45

Pour them into a pot of boiling water with some baking soda.

2016-12-22-18-21-54

In the meantime, cream butter and sugar and all the other stuff.

2016-12-22-18-25-49

Chopped pecans!

2016-12-22-18-28-40

Add the flour in.

2016-12-22-18-47-06

Put in the dates with their water in the mixture to make a batter.

2016-12-22-18-50-14

Bake at 300F for a little over an hour.

So tasty. We’d happily make this one again! Add it to the repertoire!

Tomorrow is National Pfefferneuse Day!

[FHCx296] National Nut Day

Sometimes you feel like a nut.

TODAY IS NATIONAL NUT DAY!

Aside from being a couple of nuts ourselves, we had to make sure to ingest some as well. AKma was kind enough to secure for us a bag of cocoa roasted almonds while we stay at their place on this trip.

Nuts are generally great for the quick boost of energy and helping you feel full. They’re a bit calorie dense so don’t go chomping for an hour at a time or you’ll regret it.

AKpa also likes having cashews around for a treat.

Like little chocolate turds?

Tomorrow is National Boston Cream Pie Day.

[FHCx71] National Eat Your Noodles Day/National Oatmeal-Nut Waffle Day

Eat those freakin’ noodles, already!

IT’S NATIONAL EAT YOUR NOODLES DAY AND NATIONAL OATMEAL-NUT WAFFLE DAY!

Whether we are talking about Italian or East Asian foods, noodles are incredibly important. As AK has an undying love for spaghetti, and Spaghetti Day could not ever be enough, we had to acquire more. So we went to the first place that came to mind on Noodles day… Noodles & Company!

The face of a man who needs more noodles

Noodles are great, and to have someone say “eat your noodles” makes it sound like this holiday might be difficult to celebrate. Hopefully you’ve found a way to eat your noodles, whether via the avenue de Macaroni and Cheese or by walking up Pho street. Or maybe you took der spaetzle boulevard?

For dinner we put together Oatmeal-Nut Waffles using our favorite Kodiak mix with some Quaker oats and chopped pecans. This is now the third holiday we’ve used Kodiak (after Blueberry Pancake Day and Pancake Tuesday) and this time it’s for waffles. Same kind of mix, and they make phenomenal waffles, too!

2016-03-11 17.38.51

1 cup of mix often makes more than 1 waffle. So in total we used 2 cups of mix, 2 cups of water, 1/4 cup of oats and 1/4 cup of pecans. Made 2.75 waffles.

This waffle is about to be devoured.

Delicious, fluffy interior.

We love this mix because it’s so incredibly good for you while maintaining how good it tastes. All the protein really helps keep you full as well. 380 calories for 1.375 full-size Belgian waffles? Yes, please. For comparison, an IHOP waffle is 500 calories. Doesn’t taste as good as Kodiak, either.

Tomorrow is National Baked Scallops Day!
