TODAY IS NATIONAL LEFTOVERS DAY, NATIONAL MAIZE DAY, AND NATIONAL PARFAIT DAY!

We wanted to do something different from the last couple times we did parfaits. This time we picked up a fruit and yogurt parfait from McDonald’s.

Maize. We could have done something elaborate with maize, but instead opted for the cheap stuff: some tasty Xochitl chips. Says “maiz” right on the bag.

There was just so much good that we had to keep eating it. Frankly, we would’ve consumed the calories anyway, it’s just a matter of having them spread out over two days instead of one. That’s being responsible, right?

TODAY IS NATIONAL NACHOS DAY!

Nachos were invented by a guy named Ignacio (“Nacho”) in 1943 as a treat for some US Soldiers stationed at Fort Duncan near Mexico’s border. In his hometown of Piedras Negras, they celebrate Nacho by having a Nachos Festival in October. Man, that would certainly be a sight…

Americanized nachos (more than just chips, cheese, and peppers) might include any of the following: black beans, pinto beans, refried beans, chili, cilantro, green onions, chicken, steak, ground beef, guacamole, lettuce, lime juice, olives, garlic, pico de gallo, salsa, sour cream, etc., etc. As big as you can pile it on is your tribute to the great Ignacio Anaya.

[FHCx126] National Enchilada Day/National Hoagie Day/Totally Chipotle Day

IT’S CINCO DE MAYO NATIONAL ENCHILADA DAY AND NATIONAL HOAGIE DAY AND TOTALLY CHIPOTLE DAY!

we’ve got you covered. After all, what better way to celebrate an inauthentically Mexican “holiday” with inauthentically Mexican food?

Today we mashed up all three holidays into one, and we’ve made something truly beautiful. It’s also very low calorie, and VERY tasty. So have at it!

First up, the enchilada sauce. This puppy is 5 calories for 2 Tbsp. That’s reeeeally low for sauces like this. Plus, it’s got the Chipotle we need for Totally Chipotle Day!

Next: The “tortillas.” These 60 calorie wraps are amazing. They are really the only ones we’ve tasted that are even worthwhile substituting for regular tortillas.

Brush very lightly with olive oil, and bake at 300F for about 3 minutes.

This is some Tyson Grilled & Ready Chicken, shredded up and mixed with a bit of the sauce.

A little bit of Sargento 2%-milk 4-cheese Mexican Blend…

About 1/4 cup of chicken…

Roll it up and place it in a 9×9 pan that has 3/4 cup of the enchilada sauce at the bottom.

Cover with the rest of the sauce and the cheese.

Bake at 400 for 15-20 minutes! Enchiladas are done!

Okay. So you’re gonna think we’re crazy, but stick with us. This is about to get seriously amazing. As if those enchiladas weren’t super tasty enough…

Fry up some onions and peppers with some salt, pepper, and cayenne first. We’ll need them.

My god it was amazing. And we have leftovers! Enchiladas make for great leftovers. AK‘s favorite part was the chicken and cheese inside of the enchiladas. SP loved picking the whole thing up and stuffing it in his face.

¡Olé! Again!

IT’S NATIONAL TORTILLA CHIP DAY!

Did you know that Doritos were invented at Disneyland as a way to use up old tortillas?

Tortilla chips are the quintessential opener to Tex-Mex cuisine. Endless baskets are run out to your table by people who realize they are giving away free food. I wonder how many people have shown up to a Mexican restaurant, gotten a bunch of free chips, and just left? There’s probably a special circle of hell for that.

SP‘s favorite tortilla chips can be found at El Parian, one of the best Mexican restaurants in the Twin Cities.These chips have a density and crispity that are unparalleled by any store-bought chips. They’re hearty and delicious, and just a bit salty. El Parian serves their chips with a red salsa and a white ranchero sauce. Both are excellent.

Bonus dinner picture 1: Enchiladas Guadalajara. Roast pork and onions served on top of two cheese enchiladas. They’re in there. Somewhere.

Bonus dinner picture 2: Pollo Asado. This flattened chicken breast comes out sizzling on this platter on a bed of onions so thick it makes the Tempur-Pedic seem uncomfortable.
